Frequently asked questions

Does bravas sauce need tomatoes?

Not this version: flour and stock thicken it, while paprika gives colour. Other versions include tomatoes.

Why are my potatoes soft?

Excess moisture or a crowded basket prevents browning. Dry thoroughly and cook in batches.

How do I reduce the heat?

Replace the 1 g hot paprika with another 1 g sweet paprika.
