Ingredients
Method
Drain and prepare
Rinse and drain 700 g cooked beans. Chop onion and garlic. Preheat a conventional oven to 220 °C / 425 °F.
Soften the onion
Heat 20 g oil in a 26 cm ovenproof skillet. Cook the onion over medium heat for 6 minutes, stirring.
Add garlic and paste
Stir in garlic and 20 g tomato paste. Cook 1 minute until aromatic, without burning.
Reduce the tomatoes
Add 500 g crushed tomatoes, 1 g oregano and 2 g salt. Simmer uncovered for 10 minutes until slightly thickened.
Add the beans
Gently fold in drained beans without breaking them. Heat for 3 minutes; the sauce should coat them without becoming dry.
Top with mozzarella
Turn off the heat. Scatter 150 g mozzarella and the remaining 1 g oregano over the surface without stirring.
Bake until golden
Bake at 220 °C / 425 °F for 5–8 minutes until the cheese melts and browns. Use oven gloves: the handle is hot too.
Rest and serve
Rest on a heatproof trivet for 5 minutes, then serve four hot portions with intact beans and golden cheese.
The step photos are illustrative.

Can I use chickpeas?
Yes, fully cooked and drained, although texture and nutrition change.
Can I skip the oven?
Cover over low heat to melt the cheese; it will not develop a browned top.
