Frequently asked questions

Can I make these a day ahead?

Yes. Refrigerate covered and keep the final crumbs dry until serving.

What replaces Spekulatius?

Spiced cinnamon or ginger biscuits work, with a different flavour and nutrition.

Why is the cream runny?

Warm apples, thin yogurt or underwhipped cream can loosen it. Use cold ingredients and chill fully.
