Ingredients
Method
Drain and dry the olives
Weigh 180 g drained olives. Spread on a clean towel and dry thoroughly on all sides; check that no pits remain.
Set up the coating bowls
Place flour in one shallow bowl and beaten egg in another. Combine breadcrumbs, paprika and oregano in a third bowl. Do not add salt.
Dust lightly with flour
Coat small batches of olives in flour. Shake in a sieve to leave a fine film rather than thick white clumps.
Dip in beaten egg
Turn the floured olives in beaten egg. Lift with a fork and let excess egg drip away before transferring to the crumbs.
Add the breadcrumb coating
Roll each olive in seasoned crumbs and press gently. Keep them separated on a plate; avoid adding a thick second layer.
Preheat and arrange
Preheat the air fryer for 3 minutes at 190 °C / 375 °F. Arrange olives in a single layer and distribute all 8 g oil with a mister or brush.
Air-fry until golden
Cook at 190 °C / 375 °F for 8–10 minutes, moving gently after 5 minutes. The coating should be dry and golden; check 71 °C / 160 °F in a large piece and cook longer if needed.
Cool briefly and serve
Lift out with tongs, cool for 2 minutes and divide into four portions. The centres are very hot. Discard flour, egg and crumbs that contacted raw egg.

Notes
Tips
Moisture loosens the coating, so dry the olives carefully. A small basket requires batches; add each batch's cooking time to the total. Fine breadcrumbs adhere more evenly than large crumbs.
Substitutions
Drained pitted black olives work, with a different flavour and nutrient estimate. For a spicy version, replace some sweet paprika with hot paprika, keeping 1 g total.
Storage
Best freshly cooked. Refrigerate leftovers within 2 hours in a shallow container at 4 °C / 40 °F or below and eat within 3 days. Reheat to 74 °C / 165 °F; the olives may lose some juiciness.

About this recipe
A thin golden crumb shell gives way to a juicy green olive with a pleasantly briny centre. These air fryer olives have no cheese filling or thick batter: a light flour, egg and breadcrumb coating supplies the crunch. Drying the olives thoroughly and shaking off excess flour matter more than adding extra breading. The recipe makes four appetizer portions and is best served straight after its short cooling time, while the outside remains crisp and the centre is still warm.
Frequently asked questions
Why does the coating fall off?
Moisture or excess flour is usually responsible. Dry the olives, shake off flour and let excess egg drip away before breading.
Can I stack them in the basket?
No. Air needs to circulate around them. Cook in batches if necessary and adjust the total time for your fryer.
Should I add salt?
This recipe needs none because the olives already supply salt. Paprika and oregano season the crumbs.
