Method

Follow the recipe one step at a time.

  1. Preheat and peel

Heat a conventional oven to 190 °C / 375 °F. Peel the onions and trim only enough from the base to make them stand without separating their layers.

  2. Make a small well

Scoop a top-center well roughly 2 cm wide and 3 cm deep with a small spoon. Leave the base intact and save the trimmings for another dish.

  3. Mix the seasoned butter

Combine softened butter, oil, garlic powder, paprika, salt and pepper into an even paste. There is no need to melt it.

Place each onion on a generous foil square. Divide the paste among the wells and spread a little over the outside.

  5. Seal the packets

Wrap each onion with the seam up, sealing well to retain the juices. Stand packets in a roasting tray with a little space between them.

  6. Roast until tender

Bake for about 60 minutes. Carefully check that a thin knife slides easily to the center. If it resists, reseal and continue roasting.

  7. Open and brown

Open packets with steam directed away from your face. Fold foil edges down and roast uncovered for about 15 minutes more, until lightly golden without burning the butter.

Notes

Tips and storage

Timing depends on onion size and variety: check for a tender center. For more servings, use more trays while keeping onion size similar; do not automatically double the time. This version uses garlic and paprika without commercial seafood seasoning or stock. Transfer leftovers to a clean container, refrigerate promptly at 4 °C / 40 °F or below and eat within 3 days; reheat to 74 °C / 165 °F. Contains milk. Nutrition assumes the juices are eaten; leaving some butter behind reduces fat consumed.

About this recipe

Despite the name onion boil, these onions are roasted, not boiled. Sealed packets let their own juices soften the layers while garlic paprika butter adds flavor without a seasoning blend. Makes 4 side servings in about 1 hour 35 minutes, including resting.

Frequently asked questions

Is the onion boiled?

No. It roasts inside a sealed packet. The viral name does not mean it cooks in water.

What if the center stays firm?

Reseal the packet and keep roasting. Large or firmer onions may need longer than the stated time.
