  1. Preheat and dry the wings

    Preheat the oven to 220 °C (425 °F) and line a baking sheet with parchment paper. Pat 1 kg chicken wings dry with paper towels until the skin has no moisture left.

  2. Season the wings

    In a large bowl mix 30 ml olive oil, 1 teaspoon sweet paprika, 1 teaspoon garlic powder, 1 teaspoon salt, ½ teaspoon pepper and 1 teaspoon baking powder. Add the wings and toss until well coated.

  3. Set them on a rack

    Arrange the wings in a single layer on a rack, without touching.

  4. Bake for 25 minutes

  5. Flip them

    Take out the tray and flip each wing with tongs.

  6. Bake 20 minutes more

    Return the tray to the oven and bake for 20 more minutes, until the skin is golden and crisp.

  7. Make the glaze

    Meanwhile, mix 2 tablespoons honey, 1 tablespoon soy sauce and the juice of ½ lemon.

  8. Glaze and serve

    Toss the wings in the glaze and serve right away with lemon wedges.

Notes

Drying the wings well and using baking powder is what makes the skin crisp, so do not skip either. The rack lets air circulate so the wings do not cook in their own fat. Without a rack, flip the wings more often. For a spicy kick, add half a teaspoon of hot paprika to the mix. Leftovers keep in the fridge for up to 3 days; reheat in the oven at 200 °C (400 °F) for 8 to 10 minutes.
