Notes

Tips

  • Cut the potatoes and carrots the same size so they are ready at the same time.
  • Brown the beef well before adding the tomato: it builds flavor instead of tasting boiled.
  • If the sauce dries out before the potatoes are tender, add a little more hot broth.
  • Taste at the end and adjust the salt, since the olives are already salty.
  • Wash your hands and the board after handling raw meat.

Substitutions

  • Meat: half beef and half pork, or ground turkey (cook to 165 °F / 74 °C).
  • Vegetables: peas or corn instead of carrots.
  • Sweet touch: a handful of raisins, as in Cuban picadillo.
  • Heat: a jalapeño or a pinch of chili powder with the spices.

Storage

Refrigerate the picadillo in a covered container within 2 hours and eat within 3 to 4 days. Reheat to 165 °F (74 °C). It freezes for up to 3 months, although the potatoes get a little softer.

About this recipe

Picadillo is one of the most loved home-style dishes in Latin America: ground beef simmered in a tomato sauce with onion, bell pepper, garlic and spices, made a little differently in every country and every family. This quick and easy version is made in one skillet with diced potatoes and carrots that cook right in the sauce, stretching the dish and making it a complete meal. Cumin, oregano and a bay leaf give it that home-cooked flavor, and green olives and cilantro at the end add a salty, fresh finish. Serve it with white rice, avocado or fried sweet plantains, or use it to fill empanadas, arepas or tortillas. For safety, ground beef must reach 160 °F (71 °C).
