Ingredients
Method
Prepare coffee and glasses
Make 180 ml unsweetened coffee and let it cool completely. Arrange six 200 ml glasses on a tray.
Crumble the turrón
Finely crumble 150 g soft almond turrón. Reserve 20 g for finishing and put the remaining 130 g in a bowl.
Mix the nougat cream
Add 250 g mascarpone to the bowl. Beat briefly on low speed until evenly mixed; do not overbeat.
Fold in whipped cream
Whip 200 g cold cream to soft peaks and gently fold into the mascarpone and turrón.
Make the first layer
Break 120 g ladyfingers to fit the glasses. Quickly dip half in the cold coffee and place in the bottoms without soaking.
Alternate the layers
Add half the cream. Repeat with the remaining dipped biscuits and finish with the remaining cream. You may not need all the coffee.
Chill to set
Cover the glasses without touching the cream and refrigerate for at least 4 hours.
Finish before serving
Sift 8 g cocoa over the six glasses and scatter over the reserved 20 g turrón. Serve cold and keep remaining portions refrigerated.
The step photos are illustrative.
