  1. Prepare the ingredients

    Wash 400 g strawberries and remove the stems. Squeeze the lemons to get 150 ml of juice.

  2. Blend the strawberries

    Put the strawberries, 100 g sugar and 250 ml cold water in the blender and blend until you have a smooth purée.

  3. Add the lemon

    Pour the 150 ml lemon juice into the blender and blend for a few seconds.

  4. Strain the mixture

    Pour the mixture through a fine sieve into a pitcher, pressing so all the liquid comes through.

  5. Add the water

    Add the remaining 750 ml cold water to the pitcher and stir.

  6. Taste and adjust

    Taste the lemonade and, if needed, add a little more sugar and stir until it dissolves.

    Chill the pitcher for at least 30 minutes, until very cold.

    Serve in glasses over ice, with sliced strawberries and mint leaves.

Notes

Use very ripe strawberries: they give more color and flavor. If they are very sweet, cut back a little on the sugar. Straining gives a light lemonade; unstrained it is thicker, like a nectar. Add the ice when serving rather than to the pitcher, so it does not water the lemonade down. It keeps up to 3 days in the fridge, covered; stir before serving because it separates.
