Notes

The sugar is optional: taste before adding it, since watermelon, pineapple and grapes are already sweet. Serve very cold and finish it the same day; the banana darkens over time and the fruit releases juice. For a finer base, strain it twice. The vanilla ice cream is optional and contains dairy and egg.

Frequently asked questions

Does salpicón contain water?

Yes. The base is made by blending watermelon with cold water and straining it; it is then seasoned with lemon juice and mixed with the chopped fruit.

How long should salpicón chill?

Refrigerate at least 30 minutes so it gets cold and the flavors come together. It is best the same day, because the banana darkens.

How do you serve salpicón?

Very cold, in tall glasses, dividing fruit and base. If you like, add a scoop of vanilla ice cream and fresh mint leaves on top.
