  4. Prepare the vegetables

Wash 250 g cucumber and 100 g carrot. Slice cucumber into half-moons and grate the carrot. Dry cucumber well so it does not soften the rice.

Rinse and drain 300 g cooked chickpeas. Pat dry with kitchen paper and chop 15 g parsley.

Frequently asked questions

Can I use freshly cooked rice?

Wet rice needs drying first and gives a different result. This recipe uses cold rice that has been cooled and refrigerated correctly.

Can I make it ahead?

Prepare the components separately and add rice and dressing at serving time. The mixed salad softens.

How can I adjust the dressing?

Tahini thickness varies. Add water gradually if needed until it falls from a spoon without becoming watery.
