Ingredients
Method
Prepare the tin
Heat the conventional oven to 200 °C. Lightly grease a metal 12-hole standard muffin tin with 5 g oil.
Cut the squares
Unroll 250 g cold pastry into a rectangle about 24 × 32 cm. Cut a 3 × 4 grid to make twelve 8 cm squares.
Line the holes
Press one square gently into each hole, leaving the corners pointing upwards.
Add the brie
Cut 180 g brie into twelve equal pieces of about 15 g. Put one in each pastry cup; the edible rind can stay.
Add cranberry sauce
Spoon 10 g thick cranberry sauce over the brie in each cup. Do not fill the holes to the brim.
Add walnuts
Divide 30 g chopped walnuts and 2 g chopped rosemary leaves between the cups.
Bake the cups
Bake for 18–20 minutes until the edges are golden and the bases cooked. Cover loosely with foil near the end if the tops brown too quickly.
Unmould and serve
Wait 5 minutes before lifting the bites out with a small spoon. Serve two warm bites per person; the melted cheese will be hot.

Frequently asked questions
Are these made with blueberries?
No. Use red cranberries in a thick sauce or preserve; blueberries make a different recipe.
Must I remove the brie rind?
No. The rind is edible and helps contain the cheese. Remove it only if you prefer.
Can I leave out the walnuts?
Yes. Omit them for a nut-free adaptation and check every label. The published nutrition includes the walnuts.
