Method
Cook the onion and pepper
Cook 1 sliced onion and 1 red bell pepper in strips in 45 ml olive oil over medium heat for 8 minutes, until soft.
Add the garlic and spices
Add 3 minced garlic cloves, 1 teaspoon cumin, 1 teaspoon sweet paprika and ½ teaspoon chili flakes. Cook 1 minute, stirring.
Cook the sauce
Pour in 800 g crushed tomatoes and ½ teaspoon salt. Simmer over medium-low heat for 15 minutes, until the sauce thickens.
Make the wells
With a spoon, make 5 wells in the sauce, spaced well apart.
Crack in the eggs
Crack an egg into each well, taking care not to break the yolks.
Cover and set
Cover the skillet and cook over low heat for 6 to 8 minutes, until the whites are set and the yolks are still soft.
Add parsley and feta
Sprinkle with 10 g chopped fresh parsley and 80 g crumbled feta.
Serve
Serve the shakshuka straight from the skillet with 4 warm pita breads.
