Method
Follow the recipe one step at a time.
Wash and dry the berries
Rinse strawberries under running water and dry thoroughly before removing the tops. Excess water encourages ice crystals.
Divide the fruit
Dice a small share of the berries to fold in later. Halve the remaining berries to make blending easier.
Smooth the cottage cheese base
Put cottage cheese, honey, lemon juice and vanilla in a food processor. Blend for 1–2 minutes, stopping to scrape the sides, until the curds are no longer noticeable.
Blend with the strawberries
Add the berries intended for blending and process into a smooth pink cream. Do not thin it with water or milk.
Fold in the pieces
Transfer the cream to a bowl and fold in the reserved chopped berries with a spatula, leaving small fruit pieces throughout.
Spread and cover
Pour into a shallow freezer-safe container of about 1 liter capacity. Level the surface and cover tightly against odors and frost.
Freeze and stir
Freeze at −18 °C / 0 °F for about 4–6 hours until firm. Stir edges and center after 60 and 120 minutes to reduce crystals, covering again each time.
Soften and serve
Let stand for about 10–15 minutes before serving, less in a hot room, until a spoon enters easily. Scoop portions and promptly return any still-frozen remainder to the freezer.
The step photos are illustrative.
Notes
Tips and storage
Full-fat cottage cheese gives a less icy texture than fat-free. This dessert freezes harder than commercial ice cream, so softening is part of the process. Replacing honey with a sweetener changes texture as well as sweetness; no direct conversion is provided. For double servings, use extra shallow containers rather than one deeper tub. Keep at −18 °C / 0 °F and preferably enjoy within 2 weeks for quality, not as a validated shelf life. Contains milk. The displayed total allows 4 hours of freezing plus 15 minutes of softening and the hands-on time; your freezer may need longer.

About this recipe
Blend cottage cheese until smooth, then mix it with strawberries, honey and vanilla. This frozen dessert has a tangy dairy flavor and differs from cream-based ice cream. Makes 6 servings. Allow 15 minutes of hands-on work, 4–6 hours of freezing and about 10–15 minutes to soften before serving.
Frequently asked questions
Why is it so hard straight from the freezer?
Its fat level and composition differ from commercial ice cream. Let it soften until scoopable rather than forcing a spoon through a frozen block.
Can I substitute ricotta?
It is not identical: water content, curds and flavor differ. These proportions are written for pasteurized cottage cheese.
Can I omit the honey?
Removing or replacing it changes sweetness and freezing hardness. This recipe does not give a direct sweetener conversion.
