Method

  1. Prepare fruit, utensils and quantities

    Set out scales, a clean strainer, clean paper towel, board, small knife, bowl and spatula. Incorporate 200 g hulled strawberries, 150 g raspberries, 150 g blackberries and 100 g stemless redcurrants; weigh after cleaning and removing inedible parts. Have enough lemon for 20 g strained juice and 20 g honey. These are edible net weights, not purchase weights including waste. Choose firm fresh fruit and discard moldy or rotten berries; frozen fruit is another formula. Wash hands with soap and water for at least 20 seconds, and separate equipment from raw animal foods. Keep perishable fruit at 4°C or below until preparation. Contains honey; do not serve to children under one year and do not label vegan.

  2. Wash and dry gently

    Before hulling or cutting, rinse fruit under cold potable running water in small batches in the clean strainer. Handle raspberries and blackberries gently; do not crush or soak them. Wash the whole lemon before cutting. Do not use soap, detergent, bleach or cleaning products on food. Follow pre-washed or ready-to-eat labels and prevent contamination while handling. Drain and gently pat dry with clean paper towel. Washing removes dirt and reduces some contamination but does not sterilize; dressing with lemon does not replace washing.

  3. Remove stems, weigh and cut strawberries

    Using a clean knife and board, remove leaves and hulls from washed strawberries. Detach redcurrants from stems without crushing and remove stray leaves or debris from the other berries. Weigh the 200 g cleaned strawberries, 150 g raspberries, 150 g blackberries and 100 g redcurrants entering the bowl. Halve strawberries, quartering very large ones. Keep the other berries whole. Stems, discarded fruit and washing water are outside edible mass and nutrition. If cleaning leaves insufficient fruit, prepare more of the same variety and weigh again.

  4. Mix lemon and honey dressing

    Cut the washed lemon with clean utensils, squeeze and strain out seeds. Weigh 20 g juice, rather than assuming a volume or weighing the whole lemon. Mix it in a small bowl with the 20 g honey until evenly combined. Do not heat the honey or add water, oil, sugar or yogurt. Incorporate all dressing; keep excess lemon juice separately for another use outside this calculation. Lemon provides flavor, not disinfection. Omitting or replacing honey changes the quantities and nutritional values.

  5. Dress without crushing the fruit

    Place cut strawberries, raspberries, blackberries and redcurrants in a clean bowl. Pour over all lemon-honey dressing. Gently lift and fold with a clean spatula until coated; do not beat or mash berries. Retain juices released by the fruit, without draining or adding decorative honey. Mint, nuts, cheese, yogurt, cream, cereal or bread are outside this formula. Serve immediately or cover and refrigerate promptly; no resting, maceration or heating is required.

  6. Serve cold and store briefly

    Divide into 4 similar servings, each roughly one quarter of fruit, juices and dressing. Allow 20 minutes of preparation, 0 cooking and 20 total without mandatory resting. Keep covered at 4°C or below and consume within 1 day; shorter fruit-label limits prevail. Serve small amounts and replenish from the refrigerator. Refrigerate within 2 hours outside refrigeration, or 1 hour above 32°C; discard food exceeding these limits. Smell and appearance alone do not establish safety. Do not serve this honey version to children under one year.
