Cook the pasta
Boil fettuccine in salted water until al dente. Reserve 120 ml of the cooking water and drain.
Sear the chicken
Season chicken with some salt and pepper. Heat oil and half the butter in a skillet; brown both sides until the center reaches 74°C (165°F). Rest 5 minutes, then slice.
Make the sauce
Melt remaining butter in the skillet and cook garlic for 30 seconds. Add cream and 60 ml pasta water; simmer gently for 3–5 minutes. Lower heat and stir in Parmesan gradually.
Add spinach and pasta
Wilt spinach in the sauce for 1–2 minutes. Add fettuccine and sliced chicken, tossing to coat. Thin with reserved pasta water and adjust seasoning.
Serve warm
Divide among four plates, add extra Parmesan if desired, and serve while the sauce is silky.
