These tacos al pastor are a classic recipe of Mexican cuisine, with their sweet and spicy flavor and the mixture of pork, pineapple and onion. They are easy to make at home and are perfect for a dinner with friends or family.
Ingredients for Tacos al pastor:
- 1 kg pork, cut into thin strips
- 1 fresh pineapple, peeled and sliced
- 1 large white onion, cut into quarters
- 1/2 cup white vinegar
- 2 tablespoons annatto powder
- 1 tablespoon cumin powder
- 1 tablespoon dried oregano
- 1 tablespoon of salt
- 1/2 cup orange juice
- 1/4 cup vegetable oil
- 16 corn tortillas
- Chopped fresh cilantro, to garnish
Instructions to prepare Tacos al pastor:
- In a large bowl, mix the vinegar, annatto powder, cumin, oregano and salt. Add the orange juice and vegetable oil and mix well.
- Add the pork strips and mix so that they are well coated with the marinade. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the oven to 200°C. Place the pineapple slices and onion quarters on a baking sheet and roast in the oven for 20-25 minutes, or until golden and tender.
- In a large skillet or griddle, cook the pork strips for about 10-12 minutes, or until cooked through and golden brown.
- Heat the corn tortillas in a hot skillet or in the microwave.
- To assemble the tacos, place a warm tortilla on a plate, add some strips of pork, a slice of grilled pineapple and a piece of grilled onion. Garnish with fresh chopped cilantro.
