This chicken and avocado salad is perfect for a light lunch or dinner, but is hearty enough to satisfy your hunger. Chicken provides protein, while avocado provides healthy fats and fresh spinach is rich in vitamins and minerals. It's a delicious and healthy option!

Ingredients for chicken and avocado salad:

  • 2 skinless chicken breasts, cooked and shredded
  • 4 cups fresh spinach leaves
  • 1 ripe avocado, peeled and cut into cubes
  • 1 cup fresh or canned corn (Optional)
  • 1/2 cup cherry tomatoes, cut into halves
  • 1/4 cup red onion, chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, mix together the fresh spinach leaves, corn, cherry tomatoes, red onion and fresh cilantro.
  2. Add the shredded chicken breasts and avocado cubes to the salad mixture.
  3. In a small bowl, mix the olive oil and lemon juice. Season with salt and pepper to taste.
