Ingredients for chicken and avocado salad:
- 2 skinless chicken breasts, cooked and shredded
- 4 cups fresh spinach leaves
- 1 ripe avocado, peeled and cut into cubes
- 1 cup fresh or canned corn (Optional)
- 1/2 cup cherry tomatoes, cut into halves
- 1/4 cup red onion, chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- Salt and pepper to taste
Instructions:
- In a large bowl, mix together the fresh spinach leaves, corn, cherry tomatoes, red onion and fresh cilantro.
- Add the shredded chicken breasts and avocado cubes to the salad mixture.
