Tacos al pastor (Mexico)

These tacos al pastor are a classic recipe of Mexican cuisine, with their sweet and spicy flavor and the mixture of pork, pineapple and onion. They are easy to make at home and are perfect for a dinner with friends or family.

Ingredients for Tacos al pastor:

  • 1 kg pork, cut into thin strips
  • 1 fresh pineapple, peeled and sliced
  • 1 large white onion, cut into quarters
  • 1/2 cup white vinegar
  • 2 tablespoons annatto powder
  • 1 tablespoon cumin powder
  • 1 tablespoon dried oregano
  • 1 tablespoon of salt
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 16 corn tortillas
  • Chopped fresh cilantro, to garnish

Instructions to prepare Tacos al pastor:

  1. In a large bowl, mix the vinegar, annatto powder, cumin, oregano and salt. Add the orange juice and vegetable oil and mix well.
  2. Add the pork strips and mix so that they are well coated with the marinade. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the oven to 200°C. Place the pineapple slices and onion quarters on a baking sheet and roast in the oven for 20-25 minutes, or until golden and tender.
  4. In a large skillet or griddle, cook the pork strips for about 10-12 minutes, or until cooked through and golden brown.
  5. Heat the corn tortillas in a hot skillet or in the microwave.
  6. To assemble the tacos, place a warm tortilla on a plate, add some strips of pork, a slice of grilled pineapple and a piece of grilled onion. Garnish with fresh chopped cilantro.
