  • 4 units of Skinless chicken breasts, cut into cubes

  • 1 unit of Large onion, chopped

  • 3 cloves Garlic, chopped

  • 1 tablespoon of grated fresh ginger

  • 2 Tablespoons of red curry paste

  • 1 can of Coconut milk

  • 2 Tablespoons of Coconut oil

  • 1 pinch of Salt and ground black pepper

  • Fresh coriander leaves to decorate


  • Heat the coconut oil in a large skillet over medium-high heat. Add the onion, garlic and grated ginger and cook for about 5 minutes or until the onion is soft.
  • Add the red curry paste and cook for 1 minute, stirring constantly.
