  • 1 unit of Large onion, chopped

  • 3 cloves Garlic, chopped

  • 1 tablespoon of grated fresh ginger

  • 2 Tablespoons of red curry paste

  • 1 can of Coconut milk

  • 2 Tablespoons of Coconut oil

  • 1 pinch of Salt and ground black pepper

  • Fresh coriander leaves to decorate

Instructions

  • Heat the coconut oil in a large skillet over medium-high heat. Add the onion, garlic and grated ginger and cook for about 5 minutes or until the onion is soft.
  • Add the red curry paste and cook for 1 minute, stirring constantly.
  • Add the chicken cubes and season with salt and pepper to taste. Cook until the chicken is golden brown on all sides.
  • Add the coconut milk and bring to a boil. Reduce the heat to medium-low and cook for about 15-20 minutes or until the chicken is cooked and the sauce has thickened.
  • Serve the chicken curry hot and garnish with fresh coriander leaves.

Tips

  • Marinate the chicken: Before cooking, you can marinate the chicken in a mixture of spices and natural yogurt for at least 30 minutes. This will help the meat infuse with flavors and stay juicy when cooking.
  • Vary the spiciness level: If you prefer a milder curry, you can reduce the amount of red curry paste or use a mild version. If you like it spicy, you can add a little chopped chili or use a more intense curry paste.
  • Add vegetables: If you want to add more nutrients and color to your dish, you can add vegetables such as peppers, carrots, zucchini or spinach. Add them along with the onion and garlic to cook them together with the chicken.
  • Accompaniments: Chicken Curry is usually served with white rice or basmati rice on the side. You can also add some naan bread or chapati to enjoy it Indian style.
  • Decoration: When serving, sprinkle some chopped fresh cilantro leaves over the dish to add a touch of freshness and aroma.
