Method

  1. Organize the ingredients and equipment

Prepare a scale, strainer, clean bowls and a food processor with an intact blade and lid. Have enough already cooked canned chickpeas to obtain 400 g after rinsing and draining; a can's total weight is not its drained weight. Measure 60 g toasted-sesame tahini, 40 g lemon juice, 5 g peeled garlic, 1 g cumin, 3 g salt and 80 ml cold drinking water. Divide the 20 g oil into 15 g for blending and 5 g for finishing. Set aside 0.5 g sweet paprika and 5 g clean parsley. If the tahini oil has separated, stir the jar with a clean spoon before weighing the paste. These timings do not use dried or raw chickpeas.

  2. Rinse, drain and weigh the chickpeas

Open only intact, in-date cans with no bulging or leaks. Discard the canning liquid, rinse the chickpeas with drinking water in a clean strainer and drain for about 2 minutes; do not save that water for blending. Weigh 400 g net after draining and keep the skins included in the calculation. Check that a chickpea crushes easily between clean fingers or with a fork: it must be fully cooked. If it is hard, do not compensate with extra water; choose a suitable can or cook separately and add that actual time. The recipe and USDA entry refer to rinsed and drained canned chickpeas, not salt-free boiled chickpeas or their liquid.

  3. Prepare the lemon, garlic and parsley

Wash the lemon and parsley under drinking water before cutting; dry the parsley with clean utensils. Squeeze and strain the juice to remove seeds without adding water, then weigh 40 g. Finely chop the 5 g peeled garlic. Chop the 5 g parsley and reserve it for finishing; do not put it in the processor yet. Use a clean board and knife with no contact with raw meat. Do not add zest, yogurt, milk, nut butter or extra lemon beyond the quantities.

  4. Blend the tahini, lemon and seasonings

Put the 60 g tahini, 40 g lemon juice, 5 g garlic, 1 g cumin and 3 g salt into the processor. Fit the lid and blend for about 30–60 seconds until homogeneous. Tahini may thicken when it meets lemon; this does not mean extra oil is needed. Stop and unplug the machine before opening it and scraping down with a spatula. The measured water and oil come later; never insert hands, a spoon or a spatula while the blade is turning.

  5. Add and blend the chickpeas

Add the 400 g rinsed and drained chickpeas to the tahini paste. Close the lid and blend for about 2 minutes, pausing as your machine requires. Whole chickpeas should become a thick paste, although some texture may remain. Stop and unplug before scraping the sides with a spatula, then close the lid before continuing. Do not add canning liquid, baking soda, flour or additional chickpeas. The skins stay in this recipe; a slightly textured paste is not the same as uncooked chickpeas.

  6. Add the measured water and blending oil

With the processor covered and following its instructions, add the 80 ml cold water in four additions of 20 ml, blending between additions. Use the lid's feed opening only if the machine permits it; otherwise stop and unplug before each addition. Add the 15 g oil reserved for the mixture and blend for another 1–2 minutes, pausing if needed, until the cream spreads with a spoon and holds a soft mark. Use all the measured water. If you change water, tahini or oil, record the change and recalculate rather than presenting these same figures. Do not overheat the processor through continuous use beyond the manufacturer's instructions.

  7. Transfer to a bowl and add the measured finish

Stop, unplug and open the processor. Remove the blade carefully according to the instructions without touching its sharp edge, then scrape out the hummus with a clean spatula. Transfer to a shallow bowl and make a shallow groove with the back of a spoon. Distribute the 5 g finishing oil, 0.5 g sweet paprika and 5 g parsley over the top. Whole chickpea garnishes, olives, bread and vegetables are not included in this recipe's weight or nutrition; calculate accompaniments separately. No compulsory resting time is needed to serve this recipe.

  8. Serve six portions or refrigerate promptly

Divide into 6 similar portions, each approximately one sixth of the bowl. Times are 20 minutes preparation, 0 cooking and 20 minutes total, starting with already cooked canned chickpeas: rinsing, brief draining, blending and assembly are included in preparation. If you cook chickpeas separately or your machine needs longer pauses, add that actual time. Serve with clean utensils and promptly place what you will not eat into covered containers at 4 °C or below. The final photograph illustrates hummus with the finishing quantities.

Notes

Contains sesame: check tahini and other packaging, and do not present it as safe for a sesame allergy. No dairy ingredients are added. Use already cooked, rinsed and drained chickpeas; 400 g is the net weight, not the can with liquid. Dried chickpeas need separate soaking and cooking, which must be added to the time. Replacing tahini or adding water changes flavor, texture and nutrition: record and recalculate. Keep drinking water, herbs and utensils clean. Never scrape a running processor; stop and unplug it before opening or handling the blade. Store covered at 4 °C or below and use within 3 days. Refrigerate within 2 hours out of cold storage, or 1 hour if the room temperature exceeds 32 °C; do not leave it out overnight. Remove only what you need with a clean spoon. Bread and vegetable accompaniments are excluded from the nutrition.

About this recipe

This hummus uses already cooked canned chickpeas, rinsed and drained, toasted-sesame tahini, lemon and garlic. It makes 6 servings with no additional cooking and an estimated preparation time of 20 minutes. Water and oil are measured; accompaniments are excluded from the calculation.

Frequently asked questions

Does 400 g mean the can's total weight?

No. Weigh 400 g chickpeas after discarding the liquid, rinsing and draining. Total and drained weights vary by package; use enough cans and do not automatically count a can as 400 g net.

Can I use dried chickpeas?

They need complete soaking and cooking as a separate preparation before weighing the cooked ingredient. Those times and the nutrition, especially sodium, are not automatically equivalent to this rinsed canned version. Never put dried or raw chickpeas into the processor.

Can I add water until it is thinner?

It uses 80 ml in four additions of 20 ml, with 15 g oil in the mixture and 5 g to finish. If you change water, tahini or oil, record the quantities and recalculate. The same figures do not describe another formula, and identical texture between brands is not promised.
