Mini spinach and feta quiches

These mini quiches are the perfect appetizer for any occasion. They are full of flavor thanks to the spinach and feta cheese, and their size makes them ideal to serve as a bite before dinner or to take as a snack on a picnic.

Ingredients to prepare Mini Spinach and Feta Quiches:

  • 1 cup chopped fresh spinach
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped onion
  • 1/4 cup chopped red pepper
  • 1 tablespoon olive oil
  • 1/2 cup of milk
  • 2 eggs
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • Salt and pepper to taste


  1. Preheat oven to 375 degrees F (190 degrees C)
  2. In a skillet, sauté the spinach, onion and pepper in olive oil for a few minutes until tender.
  3. In a large bowl, beat the eggs and milk together.
  4. Add the flour and baking powder to the egg mixture and beat until smooth.
  5. Add the spinach, feta cheese and sautéed vegetables to the egg mixture and mix well.
  6. Añadir sal y pimienta al gusto.
  7. Pour the mixture into a previously greased muffin mold or into individual mini quiche molds.
  8. Bake for 15-20 minutes or until the mini quiches are golden brown and firm to the touch.
  9. Let cool for a few minutes before serving.
