Ingredients:

  • 2 Tablespoons of olive oil

  • 1 large onion, thinly sliced

  • red pepper, cut into strips

  • 3 garlic, chopped

  • 1 teaspoon of ground cumin

  • 1 teaspoon of sweet paprika

  • 1 teaspoon of paprika

  • 1 can of crushed tomatoes (400g)

  • 1 pinch of salt and pepper to taste

  • 5 eggs

  • Chopped fresh parsley (optional, to decorate)

  • Crumbled feta cheese (optional, for garnish)

Instructions

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the onion and red pepper, and cook for 5-7 minutes, or until tender.
  • Add the minced garlic and cook for 1-2 minutes more, until fragrant.
  • Add the cumin, sweet paprika and paprika. Cook for 1 minute, stirring constantly.
  • Pour the crushed tomatoes into the pan and season with salt and pepper to taste. Let the mixture simmer for 10-15 minutes, or until the sauce has thickened slightly.
  • Using the back of a spoon, make small wells in the sauce and crack an egg into each.
  • Cover the pan and simmer for about 10 minutes, or until the egg whites are set but the yolks are still runny.
  • Remove the pan from the heat and sprinkle with fresh chopped parsley and crumbled feta cheese, if desired.
  • Serve the shakshuka hot straight from the pan with crusty bread for dipping.
