Ingredients:

  • 1 Libra Pork or chicken, (cut into small pieces)

  • 2 tablespoons Vegetable oil

  • 1 Unidad Medium onion (chopped)

  • 2 cloves Garlic (Chopped)

  • 1 Cup Carrots cut into thin slices

  • 1 Cup Green peppers, cut into strips

  • 1 Cup Red peppers, cut into strips

  • 1 Cup Chinese cabbage, cut into pieces

  • 1/2 Cup Mushrooms, sliced

  • 1 Cup Low sodium soy sauce

  • 1 Tablespoon Brown sugar

  • 1 Teaspoonful grated fresh ginger

  • 1 Tablespoon Cornstarch dissolved in 2 tablespoons of cold water

  • 1 Pinch Salt and pepper to taste

Instructions

  • In a large skillet or wok, heat the oil over medium-high heat. Add the meat and sauté until golden brown, about 5 minutes. Remove the meat from the pan and set aside.
  • In the same pan, add the onion and garlic and sauté for 1-2 minutes until tender. Add the carrots and sauté for 2-3 more minutes.
  • Add the peppers, bok choy and mushrooms and sauté for another 2-3 minutes until tender but still crisp.
  • Add the meat to the pan along with the soy sauce, brown sugar and grated ginger. Mix everything well and cook for 1-2 more minutes.
  • Add the cornstarch dissolved in cold water to the pan and mix well. Cook for 1-2 more minutes until the sauce thickens.
  • Serve hot with brown rice.
