  • 500 grams Large shrimp, peeled and deveined

  • 2 tablespoons butter

  • 1 Und Large onion, finely chopped

  • 2 cloves Garlic, chopped

  • 1 Und Large carrot, chopped

  • 1 Tallo Celery, chopped

  • 1 Und Leek, white part only, chopped

  • 4 Cups Fish soup

  • 1/2 Cup Dry white wine

  • 1 Cup Milk cream

  • 1/2 Cup Crushed tomato

  • 1 Hoja Laurel

  • 1 Ramita fresh thyme

  • Salt and pepper to taste

  • Chopped fresh parsley to decorate

  • In a large pot, melt the butter over medium heat. Add the onion, garlic, carrot, celery and leek, and cook until tender and lightly browned.
  • Add the shrimp to the pot and cook for a few minutes until pink and cooked through. Remove some whole shrimp to decorate the cream later, if desired.
  • Pour the white wine into the pot and let the alcohol evaporate for a few minutes.
  • Add the fish broth, crushed tomato, bay leaf and fresh thyme. Bring the mixture to a boil and then reduce the heat to medium-low. Cook over low heat for about 15-20 minutes so the flavors meld.
  • Remove the bay leaf and thyme sprig. Use an immersion blender or blender to process the mixture until you obtain a smooth, lump-free cream.
  • Return the shrimp soup to the pot and heat over medium-low heat. Add the milk cream and mix well. Heat the cream for a few minutes without letting it boil.
  • Adjust seasoning with salt and pepper to taste. Serve the shrimp cream in individual bowls. Garnish with the reserved shrimp and fresh chopped parsley.

  • Use fresh shrimp whenever possible, as they will give the cream a more pronounced flavor. If you can't find fresh shrimp, you can opt for good quality frozen shrimp.
  • If you want a more intense flavor, you can add some extra ingredients such as a pinch of smoked paprika, a teaspoon of fish sauce or a few drops of hot sauce. Adjust the quantities according to your personal preference.
  • If you want a smoother texture, you can strain the shrimp cream after processing it with the immersion blender or blender. This will help remove any lumps or residual fiber from the vegetables.
  • To decorate, you can reserve some whole shrimp when cooking and place them on top of each bowl of cream before serving. You can also add some chopped fresh parsley or even a pinch of smoked paprika for an extra pop of color.
  • Accompany the shrimp cream with crusty bread or toast to enjoy a complete experience. The bread will complement the soft texture of the cream and allow you to savor every spoonful until the last bite.

Shrimp cream and health benefits

Cream of shrimp, like many other dishes, can have certain health benefits, although it is also important to take into account the ingredients used and the quantities consumed. Here are some possible benefits associated with creamed shrimp:

  1. Protein: Shrimp are a good source of lean protein, meaning they are low in saturated fat and rich in essential amino acids. Proteins are important for tissue growth and repair, as well as for the proper functioning of the immune system.
  2. Vitamins and minerals: Shrimp contain a variety of essential vitamins and minerals, such as vitamin B12, vitamin D, vitamin E, iron, zinc and selenium. These nutrients play a crucial role in various body functions, such as energy production, bone health, and the immune system.
  3. Omega-3: Shrimp contain omega-3 fatty acids, especially eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA). These fatty acids are known for their heart and brain health benefits, as they can help reduce the risk of cardiovascular disease and promote good cognitive health.
  4. Low calories: Cream of shrimp can be relatively low in calories compared to other creamy dishes. However, it is important to keep in mind that heavy cream and butter add calories and fat. Controlling portions and opting for lighter versions, such as using skim milk or reducing the amount of heavy cream, can help moderate caloric intake.

It is important to note that these benefits depend on the ingredients and preparation method used. By choosing the right ingredients and quantities, shrimp soup can be part of a balanced and nutritious diet.
