Ingredients:

  • 500 grams Large shrimp, peeled and deveined

  • 2 tablespoons butter

  • 1 und Large onion, finely chopped

  • 2 cloves Garlic, chopped

  • 1 und Large carrot, chopped

  • 1 Stem Celery, chopped

  • 1 und Leek, white part only, chopped

  • 4 Cups Fish soup

  • 1/2 Cup Dry white wine

  • 1 Cup Milk cream

  • 1/2 Cup Crushed tomato

  • 1 Sheet Laurel

  • 1 Twig fresh thyme

  • Salt and pepper to taste

  • Chopped fresh parsley to decorate

Instructions

  • In a large pot, melt the butter over medium heat. Add the onion, garlic, carrot, celery and leek, and cook until tender and lightly browned.
  • Add the shrimp to the pot and cook for a few minutes until pink and cooked through. Remove some whole shrimp to decorate the cream later, if desired.
  • Pour the white wine into the pot and let the alcohol evaporate for a few minutes.
  • Add the fish broth, crushed tomato, bay leaf and fresh thyme. Bring the mixture to a boil and then reduce the heat to medium-low. Cook over low heat for about 15-20 minutes so the flavors meld.
  • Remove the bay leaf and thyme sprig. Use an immersion blender or blender to process the mixture until you obtain a smooth, lump-free cream.
  • Return the shrimp soup to the pot and heat over medium-low heat. Add the milk cream and mix well. Heat the cream for a few minutes without letting it boil.
  • Adjust seasoning with salt and pepper to taste. Serve the shrimp cream in individual bowls. Garnish with the reserved shrimp and fresh chopped parsley.
