Pumpkin cream is a creamy and comforting soup made with pumpkin, onion, garlic, chicken broth, cream and a combination of spices that give it a warm and slightly sweet flavor. In the north it is usually perfect to enjoy on a cold autumn or winter afternoon but it is delicious at any time of the year.
Ingredients for Pumpkin Cream:
- 1 kg of pumpkin peeled and cut into cubes
- 1 chopped onion
- 2 cloves of garlic, minced
- 1 liter of chicken or vegetable broth
- 1 cup of milk cream
- 1/4 cup of olive oil
- Salt and pepper to taste
Instructions to prepare Pumpkin Cream:
- In a large pot, heat the olive oil over medium heat and add the onion and garlic. Sauté until golden brown.
- Add the pumpkin and mix well with the onion and garlic. Cook for a few minutes until the pumpkin is a little golden.
- Add the chicken or vegetable broth and mix well. Bring to a boil and reduce heat. Cook over medium-low heat for about 20 minutes, until the pumpkin is cooked through.
- Remove the pot from the heat and let the soup cool slightly. Use a blender or food processor to blend the soup until smooth.
- Return the soup to the pot and add the heavy cream. Heat over medium heat for a few minutes, until the cream is very hot.
- Serve the pumpkin cream hot, seasoning with salt and pepper to taste. You can garnish with toasted pumpkin seeds, fresh herbs or a drizzle of olive oil.
