Pumpkin cream

Pumpkin cream is a creamy and comforting soup made with pumpkin, onion, garlic, chicken broth, cream and a combination of spices that give it a warm and slightly sweet flavor. In the north it is usually perfect to enjoy on a cold autumn or winter afternoon but it is delicious at any time of the year.

Ingredients for Pumpkin Cream:

  • 1 kg of pumpkin peeled and cut into cubes
  • 1 chopped onion
  • 2 cloves of garlic, minced
  • 1 liter of chicken or vegetable broth
  • 1 cup of milk cream
  • 1/4 cup of olive oil
  • Salt and pepper to taste

Instructions to prepare Pumpkin Cream:

  1. In a large pot, heat the olive oil over medium heat and add the onion and garlic. Sauté until golden brown.
  2. Add the pumpkin and mix well with the onion and garlic. Cook for a few minutes until the pumpkin is a little golden.
  3. Add the chicken or vegetable broth and mix well. Bring to a boil and reduce heat. Cook over medium-low heat for about 20 minutes, until the pumpkin is cooked through.
  4. Remove the pot from the heat and let the soup cool slightly. Use a blender or food processor to blend the soup until smooth.
  5. Return the soup to the pot and add the heavy cream. Heat over medium heat for a few minutes, until the cream is very hot.
  6. Serve the pumpkin cream hot, seasoning with salt and pepper to taste. You can garnish with toasted pumpkin seeds, fresh herbs or a drizzle of olive oil.
