Equipment

Ingredients
  

  • 3 ripe bananas very black on the outside, sweeter on the inside
  • ½ cup 115 g melted butter
  • ¾ cup 150 g sugar (can be brown for more moisture)
  • 2 large eggs
  • 1 teaspoonful of vanilla extract
  • 1 ½ cups 190 g all-purpose wheat flour
  • 1 teaspoonful baking soda
  • ½ teaspoonful of salt
  • ½ teaspoonful ground cinnamon optional, for more aroma
  • ½ cup walnuts or chocolate chips optional, to add extra texture

Instructions
 

  • Preheat the oven to 175 °C (350 °F).
  • Engrasa un molde rectangular de 22x12 cm o cúbrelo con papel pergamino.
  • In a large bowl, mash the ripe bananas with a fork until smooth.
  • Add the melted butter, sugar, eggs, and vanilla. Mix well until combined.
  • Sift the flour, baking soda, salt, and cinnamon.
  • Gradually add to the banana mixture, folding gently.
  • Fold in chopped walnuts or chocolate chips if you want a tastier, more textured bread.
  • Pour the mixture into the pan.
  • Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool in the pan for 10 minutes.
  • Remove from the pan and place on a rack to cool completely.
  • Serve in slices with coffee, tea, or milk.

Notes

  • For a lighter version, replace half of the butter with unsweetened applesauce.
  • If you want more moisture, use brown sugar or add 2 tablespoons of plain yogurt.
  • It keeps for up to 3 days at room temperature in an airtight container, or 5 days refrigerated.
  • It can also be frozen in slices wrapped in plastic wrap and stored in an airtight bag.
