Ingredients:

  • 16 sheets of rice paper

  • 2 grated carrots

  • 1 red pepper julienned

  • 1 green pepper julienned

  • 1 onion julienned

  • 1 cup bean sprouts

  • 1 cup julienne bok choy

  • 2 tablespoons olive oil

  • 1 tablespoon grated ginger

  • 2 tablespoons soy sauce

  • Salt and pepper to taste

  • 3 tablespoons soy sauce

  • 1 tablespoon honey

  • 1 teaspoon rice vinegar

  • 1 teaspoon grated ginger

  • 1 clove of garlic, minced

  • 1/4 cup of water

Instructions

  • In a large skillet, heat the olive oil over medium heat. Add the onion and sauté for 2-3 minutes or until golden.
  • Add the peppers and sauté for another 2-3 minutes.
  • Add the bok choy, grated carrots, bean sprouts, grated ginger and soy sauce. Cook for 5-7 minutes or until the vegetables are soft.
  • Season with salt and pepper to taste.
  • Soak a sheet of rice paper in warm water until soft. Place it on a cutting board and place a little of the vegetable mixture in the center.
  • Fold the side edges of the sheet inward and then roll it from the bottom up, making sure the vegetable mixture is well sealed.
  • Repeat this process with the rest of the rice paper sheets and the vegetable mixture.
  • Heat a large skillet over medium-high heat. Place the vegetable lumpias in the pan and cook for 3-4 minutes on each side, or until golden and crispy.
