Ingredients:

  • 3 medium potatoes, peeled and cut into small cubes
  • 1 medium onion chopped
  • 1 red pepper chopped
  • 1 chopped green pepper
  • 2 cloves of garlic, minced
  • 1 cup chopped fresh mushrooms
  • 1/2 cup grated cheese
  • 2 tablespoons olive oil
  • Salt and ground black pepper to taste
  • 2 beaten eggs
  • 1/4 cup milk

Instructions to prepare Vegetarian Gramado Scramble:

  1. Cook the potatoes in salted water until tender. Drain them and reserve them.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion, peppers and garlic. Sauté for about 5 minutes or until the vegetables are soft.
  3. Add the mushrooms and cook for another 5 minutes, until golden.
  4. Add the cooked potatoes to the pan and mix everything well.
  5. In a separate bowl, beat the eggs with the milk and add this mixture to the pan.
  6. Cook everything over medium heat, stirring constantly, until the eggs are cooked and creamy.
  7. Add the grated cheese and mix well.
  8. Taste and adjust the seasoning with salt and pepper.
  9. Serve hot and enjoy your scrambled vegetarian gramajo.
