Fried rice with vegetables

This vegetable fried rice side dish is a healthy and delicious way to include more vegetables in your daily diet. In addition, it is easy to prepare and is perfect to accompany any main dish.

Ingredients:

  • 2 tablespoons vegetable oil
  • 1 chopped onion
  • 3 cloves garlic, minced
  • 1 large carrot, grated
  • 1 red pepper, cut into strips
  • 1/2 cup peas
  • 2 beaten eggs
  • 4 cups cooked rice (preferably day-old rice)
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil (optional)
  • Salt and pepper to taste

Instructions to prepare fried rice with vegetables

  1. In a large skillet, heat the vegetable oil over medium-high heat.
  2. Add the onion and garlic and cook until golden.
  3. Add the grated carrot, red pepper and peas and cook for a few minutes until the vegetables are tender.
  4. Push the vegetables to the side of the pan and add the beaten egg. Stir quickly to make scrambled eggs and then mix with the vegetables.
  5. Add the cooked rice and stir until well combined with the vegetables.
  6. Add the soy sauce and sesame oil (if using) and stir until the rice is well coated.
  7. Season with salt and pepper to taste.
  8. Serve hot as a garnish for your favorite foods.
