This vegetable fried rice side dish is a healthy and delicious way to include more vegetables in your daily diet. In addition, it is easy to prepare and is perfect to accompany any main dish.
Ingredients:
- 2 tablespoons vegetable oil
- 1 chopped onion
- 3 cloves garlic, minced
- 1 large carrot, grated
- 1 red pepper, cut into strips
- 1/2 cup peas
- 2 beaten eggs
- 4 cups cooked rice (preferably day-old rice)
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil (optional)
- Salt and pepper to taste
Instructions to prepare fried rice with vegetables
- In a large skillet, heat the vegetable oil over medium-high heat.
- Add the onion and garlic and cook until golden.
- Add the grated carrot, red pepper and peas and cook for a few minutes until the vegetables are tender.
- Push the vegetables to the side of the pan and add the beaten egg. Stir quickly to make scrambled eggs and then mix with the vegetables.
- Add the cooked rice and stir until well combined with the vegetables.
- Add the soy sauce and sesame oil (if using) and stir until the rice is well coated.
- Season with salt and pepper to taste.
- Serve hot as a garnish for your favorite foods.
