This spaghetti carbonara recipe is a classic in the pasta category. The creamy sauce and smoky flavor of pancetta or bacon combine perfectly with al dente spaghetti. It is a quick and easy recipe that everyone at home will surely like.
Ingredients:
- 450 grams of spaghetti
- 150 grams of pancetta or bacon cut into small cubes
- 4 eggs
- 1/2 cup grated Parmesan cheese
- 1/2 cup grated Pecorino Romano cheese
- 1 teaspoon ground black pepper
- Salt to taste
Instructions:
- Cook the spaghetti in salted water following the package instructions until al dente.
- While the spaghetti is cooking, brown the pancetta or bacon in a frying pan over medium heat until crispy. Remove the bacon from the pan and set it aside.
- In a large bowl, beat the eggs with the Parmesan and Pecorino Romano cheeses, black pepper and a pinch of salt until well combined.
- When the spaghetti is cooked, drain it and reserve a cup of the cooking water.
- Add the spaghetti to the pan with the bacon and stir to mix well.
- Add the egg and cheese mixture to the pan with the spaghetti and stir quickly so the eggs cook but do not become scrambled.
