This vegetable soup is a healthy and delicious option for a light meal or as a starter at dinner. It's made with a variety of fresh vegetables like onion, carrots, celery, peppers, and zucchini, along with canned tomatoes and vegetable broth. Dried thyme adds a touch of aromatic flavor, while salt and ground black pepper are used to enhance the flavor of the vegetables.
Ingredients:
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, peeled and thinly sliced
- 2 sticks celery, thinly sliced
- 2 cloves garlic, minced
- 1 red pepper, seeded and diced
- 1 green pepper, seeded and diced
- 1 zucchini, diced
- 1 can of diced peeled tomatoes

Instructions:
- Heat the olive oil in a large pot over medium-high heat. Add the onion, carrots and celery and cook until soft, about 5 minutes.

- Reduce the heat to medium-low and add the dried thyme, salt and black pepper. Simmer for 30-40 minutes, until the vegetables are tender.
- Serve hot with fresh bread.
