Vegetable soup

This vegetable soup is a healthy and delicious option for a light meal or as a starter at dinner. It's made with a variety of fresh vegetables like onion, carrots, celery, peppers, and zucchini, along with canned tomatoes and vegetable broth. Dried thyme adds a touch of aromatic flavor, while salt and ground black pepper are used to enhance the flavor of the vegetables.

Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and thinly sliced
  • 2 sticks celery, thinly sliced
  • 2 cloves garlic, minced
  • 1 red pepper, seeded and diced
  • 1 green pepper, seeded and diced
  • 1 zucchini, diced
  • 1 can of diced peeled tomatoes
  • 4 cups of vegetable broth4 cups of vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried thyme

Instructions:

  1. Heat the olive oil in a large pot over medium-high heat. Add the onion, carrots and celery and cook until soft, about 5 minutes.
  2. Add the garlic, peppers and zucchini and cook for another 5 minutes.
  3. Add the peeled tomatoes and vegetable broth and bring to a boil.
  4. Reduce the heat to medium-low and add the dried thyme, salt and black pepper. Simmer for 30-40 minutes, until the vegetables are tender.
  5. Serve hot with fresh bread.
