Ingredients to prepare Colombian stuffed potatoes:
- 2 pounds of potatoes
- 1 onion finely chopped
- 1 clove of garlic finely chopped
- 1/2 pound ground beef
- 1/2 cup peas
- 1/2 cup finely chopped carrot
- 1/4 cup raisins
- 2 eggs
- 1 cup breadcrumbs
- Vegetable oil for frying
- Salt and pepper to taste
Instructions to prepare Colombian stuffed potatoes:
- We start by peeling the potatoes and cutting them into cubes. Then, we cook them in salted water until they are soft and tender. It is important not to overcook them to prevent the puree from becoming watery.
- In a frying pan, sauté the onion and garlic until golden. Add the ground beef and cook until well cooked. Add the peas, carrot and raisins and cook for a few more minutes. Season with salt and pepper to taste and reserve.
- Once the potatoes are ready, drain them and mash them until you obtain a smooth, lump-free puree.
- We take a portion of mashed potato and crush it in the palm of our hand to form a kind of disk. We add a tablespoon of the meat filling in the center and close carefully to form a ball.
- In a deep plate, beat the eggs. On another plate, place the breadcrumbs.
- We pass each stuffed potato ball first in the egg and then in the breadcrumbs, making sure to cover the entire surface well.
- Heat the vegetable oil in a frying pan over medium-high heat and fry the stuffed potatoes until golden and crispy on the outside.
- We remove the stuffed potatoes from the oil and place them on absorbent paper to eliminate excess oil.
- Ready! We serve the stuffed potatoes hot and enjoy this delicious dish.
