Ingredients:

  • 1 Cup of dried lentils

  • 1 unit of Medium onion, finely chopped

  • 3 cloves Garlic, finely chopped

  • 2 units of Carrots, peeled and chopped into small cubes

  • 2 stems of Celery, chopped into small cubes

  • 1 unit of Green pepper, chopped into small cubes

  • 1 can of Whole tomatoes in juice (400 grams)

  • 1 liter of Chicken or vegetable broth

  • 2 Tablespoons of Olive oil spoons

  • Salt and pepper to taste


  • Chopped fresh coriander leaves to decorate (optional)

Instructions

  • Rinse the lentils and soak them in cold water for at least 1 hour.
  • In a large pot, heat the olive oil over medium heat. Add the onion and cook until translucent, about 5 minutes. Add the garlic and cook for 1-2 more minutes.
  • Add the carrots, celery, and green pepper, and cook for 5 more minutes, stirring occasionally.
  • Add the whole tomatoes with their juice and the broth. Stir to combine and bring to a boil.
  • Add the drained lentils, salt and pepper to taste. Stir to combine, reduce heat to medium-low, and simmer for about 30-40 minutes, or until lentils are tender.
  • Serve hot, garnished with fresh chopped cilantro leaves if desired.
