  • In a large bowl, mix the flour, eggs, salt and olive oil until the dough comes together. Knead the dough for about 5 minutes until it is smooth and elastic. Wrap in plastic and let rest for at least 30 minutes.
  • In another bowl, mix the spinach, ricotta cheese, Parmesan cheese, salt, and pepper until well blended.
  • Roll out the dough on a floured surface to 1/8-inch thickness. Use a ravioli cutter or small glass to cut the dough into 2-inch diameter circles.
  • Place a tablespoon of the spinach and cheese mixture in the center of each dough circle. Fold the circle in half and press the edges to seal. Make sure to get all the air out of the ravioli.
  • Boil the ravioli in salted water for about 2-3 minutes or until al dente. Serve with tomato sauce or butter and sage.
